I used to make my dad’s lunches and I usually just made him some ham or roast beef sandwhiches. I’m not sure what your usual pallet includes, but super easy things you can make is any sort of sandwich. Whether it’s cheese and ham, or jiffy fluffer nutter and almond butter. Those are really easy to slap together (literally). Do you have to-go containers or anything? Even just some little zipper bags are neat too. You could put chips, crackers, veggies, fruits (if you buy any), cheese, or even just some leftover candy. Quick things that I used to throw in were those fruit cups and yogurt tubes. No need to make or store it since it’s already in a container itself! If you have no bread or are running late, you could even just bring some lunch meat itself in a zipper bag. If you get worried about time, when I was in school, I used to make my lunches the night before and store my lunch box in the fridge. As for your lunch box situation… You could try asking your mom for another one, but in the meantime, maybe go old school and use a paper bag. If you don’t have that, a plastic one would be okay too. It’s not pretty but it’s better than nothing lol. I can look up other ideas for you if you’d like. This stuff is sort of my thing anyways :)

Okay, so I kind of did some research. Other foods you could pack that even I used to do was packing a zipper bag of ceareal. Any kind. Cherrios, Captain Crunch, Honey Bunches of Oats, you name it. The only thing is, I don’t suggest tiny ceareals like coco or rice crispies since that’s hard to grab and will most likey get everywhere when you try to get a hand full.
Another food I thought of is fig newtons. I used to have those when I was in elementary school, so they would be fine for middleschool too.
Those zipper bags are a lunch box lifeline. Do you have anything like chexmix, or anything like that? That would be something you could do too.
A big one I found is burritos. You can put pretty much anything in it, and they’re easy to wrap up! Use up the leftover rotisserie chicken and drizzle ranch and cheese. Spice it up with some hot sauce instead of ranch. You could also do my personal favorite… Breakfast burittos. Maple syrup, sausage, bacon, and eggs. Im not sure if you are comfortable with a can opener, but you could also make a tuna wrap with some canned tuna, lettuce, and french dressing. Im not a french dressing gal, but it’d be a cool thing for you to try.
Instant oatmeal. Super easy to make, and comes in many flavors for variety. The only thing is, you need a plastic container for that. If you have that sort of thing, there you go.
Something you dont need a container for is bars! Ask your mom for those because they are pretty cheap I believe, and they are easy to grab from the pantry.
For lunch containers, I got to tell you a secret. Yknow the lunch meat plastic boxes? Yknow how they have a neat lid and are large enough for a sandwich? Y’see where I’m going with this? You NEED to save those xD I do because you cannot always get to the store to buy official sandwich containers. They come in different sizes depending on what kind of meat you buy, but they are so perfect. I used them as containers for my dad’s lunch and you can easily reuse them every time. If you have any neat reusable bags from the grocery store, you could put those in there. If your mom is not willing to buy you a real lunch box at least. Not those plastic thin bags, but those more durable ones with the handles. They have some nice ones out there, so maybe you own one.
Anyways, I hope I helped a little bit. :) -
